Our Menu: Revamped!!!



Mike and I joined the YMCA this week. Seriously, you can't been $55 a month for a family of 4. Really. Especially since we have zero family in the area to watch the girls...this works out PER-fect!!!
I'm going to admit... after I had the girls, I joined the club of new moms that worry about their "baby weight." I have been blessed that nursing twins has helped me tremendously in losing ALL of the weight...but here's where my fear comes to play...Oh...my fear? It's gaining the weight back.

What's going to happen when the girls stop nursing????

So..in attempt to prevent my worst fear from coming true I have been researching recipes and looking up ways to incorporate more vegetables, herbs, and whole wheat products into our diets. The girls are already on a roll with their homemade food...we're right behind them. So we're trying to eat more vegetables, whole grains, turkey, chicken, beans and lentils. We're cutting out the butter (not all of it), a lot of the groud beef, and white rice meals.


My menu this week shows where the changes are taking place. In the past I would skip meals because I was too busy and plum lazy. Now, I plan to have quick options available for those times when I have no time.
Here we go:

Suppers
Monday: Chipolte Shredded Beef with Roasted Corn and Red Pepper Salad

Tuesday: Herbed Tomatoes, Chicken and Rice Pilaf with Side Salads

Wednesday:  Healthy French Onion Soup with French Bread

Thursday:  Grilled Tuscan Lemon Chicken with Wild Rice and Veggies

Friday: Turkey Parmesan Casserole with Side Salads

Saturday: Pressed Smoked Turkey Sandwiches on Homemade Whole Wheat Bread with Potatoe Salad


Breakfasts
Homemade Whole Wheat Toast
Oatmeal
Homemade Wheat Blueberry Muffins
Cottage Cheese and Fresh Peaches
Scrambled Eggs
Whole Wheat Pancakes

Lunches
Chicken Salad Sandwiches
Left overs

Snacks
Trail Mix
Granola Bars
Assortment of fruits:
Apples, Grapes, Bananas, Peaches, Blueberries, Oranges
Carrots
Cucumbers


Last week we didn't stick to my menu at ALL!!! I blame it on myself though...I didn't get groceries until this past Saturday. Ughh... horrible!!

But..that's all in the past and the stock has been replenished.
I'll make sure to post those recipes above for you this week. Can't wait to share them.
