It's not often that those words come out of the mouth of my husband. When it comes to food we are both what we like to call, "tweakers." Meaning, we can't leave a recipe like we found it. Modifications will find their way in somehow, someway.
Mike has always been a big fan of a classic macaroni salad. When I worked in at the Chow Hall in Louisiana, he would always beg me to save him some when I'd make it for the salad bar. Back then I was following the Air Force's recipe card because that's how things were done. *wink* Ok, ok... I admit I tweaked it a little bit...ok...ok...just a wee tiny bit more that a bit. But their recipe was sort of blah and no one really ever ate it. Something had to be done.
Somehow I had completely forgotten about this recipe and it was until this weekend when Mike asked me to make it for him that I realized it. So we decided it was time to dig up the tried and true recipe and whip it up for the holiday weekend. I hope you enjoy!
1/2 onion finely finely chopped
1/4 stalk celery finely finely chopped
2 T pimentos chopped
1-2 T sugar
1 cup mayo
2 T apple cider vinegar
1 T yellow mustard
salt and pepper to taste
Mix it all up...and there you have it! It's really better if you let it sit in the fridge for a couple of hours or over night so the flavors blend together.
Sweet peas would be good in this as well, but Mike doens't like them. Oh the things we do for the one's we love!
