Creamy Pasta


Some times I see a recipe and think "Oooh! That sounds yummy and simple to keep for goods." Then when I actually make it, it's not what I had thought or the hubby might snub his nose a little. Talk about discouraging. Well, I've been on the hunt again for easier meals that aren't loaded down with nonsense. 

So when I saw this recipe over at Simple Daily Recipes, I got really excited because it was exactly what I had been looking for. The husband said it reminded him of a stroganoff  type dish but better. 


It was so quick to pull together and I had everything on hand too. The best part was that I added even more veggies to it than what it called. Wait! It didn't call for any. So that's a plus right there. I also added in some northern beans for an extra boost. Always trying to sneak that in there when I can.

2 1/2 cups penne pasta cooked I used the spirals obviously
4 T low fat butter
1 garlic clove, crushed I had minced on hand
1/3 onion, sliced I diced mine up really small
2 cups chicken broth
1/2 cup sour cream, yogurt, or milk I used Greek yogurt and it was divine!
1/4 t salt
1/8 t pepper
2 roasted chicken breasts cubed I used one cup of chicken I had in the freezer
red pepper flakes, optional 
1 15 oz can Northern beans
Cook the pasta and veggies ahead of time. I boiled my carrots and right before I took them off the stove, I dropped in some fresh cauliflower. While all of that is cooking, in another pan melt the butter over medium heat. Add the garlic and onions and cook until softened. Then sprinkle the flour and cook 1-2 minutes. Stir well. Then add broth and continue to stir until it comes to a simmer. Take the pan off the heat and stir in the sour cream/yogurt/milk (remember it's your choice) until the sauce is smooth. Add in the pasta and veggies and combine well. If you're adding beans, this is where I would add them in.
  
The hubby really loved it! It literally took 15 maybe 20 minutes to cook. If you have cooked pre-cooked chicken in the freezer, it will always be a quick meal to have as a "go to." And Lord knows, we all need those. Give it a try! It's quite yummy!
