Talk about yummy!!!
When I picked up my CSA box this week, you'll never guess what I found when I flipped the lid.
Serrano peppers!!!
A whole lotta of them.
So...I decided to do the salsa...chips and salsa that is.
Super easy! Super yummy!
Here's what you'll need:
1 big vidalia onion
5 cloves of garlic
12-15 Serrano peppers (if you like it between medium and hot)
juice from one lime
6 ripe tomatoes or you can use a combination of
1-2 fresh tomatoes and 2 cans of whole tomatoes (your choice)
3 Tbspn White pepper
Salt to taste
Cut your tomatoes up into large chunks. Same goes for your onions.
Take the peeling off of your garlic cloves, cut the tops off of your peppers and throw it ALL into a food processor, blender, or use an emulsion blender. Which ever you have.
After it's all chopped up really really good. You'll want to add your salt and white pepper. Let it cook on the stove for about 45 minutes.
Side note: If the salsa isn't hot enough (because Serrano's aren't extremely full of heat) sprinkle in some red pepper flakes and it'll be perfect!!
It tastes so yummy.
Mike has been on the search for a good salsa for a long time. He told me that this is exactly what he wanted. YAY!!! Can't get any better than that... huh ladies?
