Grilled Fish w/ Lemon Garlic Pasta



Oh My! OH MY!!!

I, in no means, write this to brag. By no means. But...this is one of the BEST creations I have whipped up in my little South Carolina kitchen.

Inspiration: My husband.
He has a PT test today where he'll have to run 1.5 miles within 13 minutes, do at least 42 sit-ups and 30 something push-ups within a minute time. So, this was all to give him the energy to be able to do all of this and succeed!!!

He wanted something light to eat for supper. I suggested the fish and pasta because the fish is light and the pasta would carry over in the form of energy for his early run. I figured that there needed to be a light sauce so I came up with the lemon idea and boy am I glad I did.

As usual, I didn't use a recipe, so I'm going to attempt to share my recipe with you....please bare with me.

Tilapia filet's
1 lemon
6 cloves of garlic
1/2 small onion (I used a vidalia)
3 Tbspn unsalted butter
1 Tbspn Cajun seasoning
2 servings of whole wheat angel hair pasta

Prep:
I got my water boiling so it was hot and ready when I  needed it. 
I juiced the lemon in my little hand juicer so it was ready to go too. 
The onions and garlic were diced up super small to allow for quick cooking.
I placed the fish filet's in a piece of foil. I split 1 Tbspn of butter between the two, simply placing it on top. We sprinkled some Cajun seasoning on both sides, but you could also use a Lemon Pepper season. that would be yummy too. I folded the foil to meet in the center and pinched the ends. No need to seal the pouch.

 I started with 1 Tbspn of butter and the onions. I let the onions cook for about a minute or so before adding the garlic. Remember: Garlic burns really fast and leaves a bitter taste.  Once the onions had cooked a bit, I added the garlic and let it bubble for only a few minutes more. I then added the only half the lemon juice. If you really like a lemon flavor, add it all. Otherwise, add a bit at a time to figure out how much you prefer. We only used half. Add another Tbspn of butter and take off the heat.

Now you can add you pasta to the water and get the fish on the grill. The fish will only take a few minutes. You'll know it's done when the meat flakes apart. Ours took only 6-8 minutes on a medium flame.

Once the fish is cooked, take your lemon sauce and toss it over your warm pasta.  Serve with some garlic bread and you have a complete meal.

When we started eating this...we were both surprised at how delicious it was. SOOOOOO good! SOOOO good!!!! He looked at me and said, "Add this to your list of meals..mmm k?!"

I hope that it provides him the energy he needs this morning to pass his PT test. He was so full of anxiety over the whole thing. But, I know him and the man he is, he'll pass it with flying colors. If not for him, for his family. That's justhow he is.

I really think you should give this a try. It's super fast, super easy, and super yummy!!!!
