YeeHaw Chicken and Rice

This is one of those recipes that I came up with while I was cooking it. And low and behold it turned out scrumdiddily-uptious!!!!!!

I'll just call it
Yeehaw Chicken & Rice


For the chicken here's what you'll need:
boneless chicken breasts
bread crumbs
cumin
garlic and onion powder
red pepper or cayenne pepper
chili powder
paprika
salt
1 beaten egg
2 Tbspn oil
2 slice of cheese ( I used Muenster)

How to fix it:
Take your chicken breasts and pound them so they're thinner. You can see the difference in the picture below. It speeds up the cooking process.


Don't have a meat mallot (I don't know how to spell it and apparently the spell check doesn't either)?
Me either...I just used a thick glass jar that I had in the cabinet. Work Great!!!

        Sprinkle the seasonings on your chicken and give it a good rub down.
 Now for the bread crumbs, I made my own. Super easy.
 Day old bread + a go around in the food processor
= super cheap bread crumbs. YAY!!!!






Your going to add some cumin in with your bread crumbs for extra flavor too. Take the chicken and dip it into your beaten egg then dredge it into the bread crumbs. Don't be stingy now!!!!

In  a cast iron (that's what I used), heat your oil. I'd say about medium-medium high. Lay the chicken in the pan and cook on both sides until the bread crumbs are browned a bit. Then take the pan and place it in the oven (you'll need an oven safe pan) for another 15-20 minutes or until the chicken is cooked all the way through. When you have about 5 minutes left, place a slice of muenster cheese on top to melt.

Now for the rice. YUM YUM!!!!

What you'll need:
About 2 cups of rice ( mine was left overs)
1 Tbspn butter
1/2 can Enchilada sauce
1 Poblano pepper, diced
1/2 cup corn
1/4 cup seasoned black beans
1 Roma tomato, diced
1/2 onion, diced
garlic powder
salt and pepper
cumin
chili powder

How to fix it:

Take the butter and melt it in a skillet. Add your veggies except the tomato and cook for a few minutes. Then add your rice mixing it all together. Pour in your sauce and stir. Add in your spices and tomato and let cook on the stove for 5-10 minutes. (I just sprinkled in the spices...no measurements. I'm sorry)


Up close of my rice after it was finished. Looks just as good as it tasted!!!!



Once your rice and chicken is finished...you have your meal!!!
Mike was so nice to make a pretty plate display for yall...cilantro and all. *giggle*



Now, you could also make another meal out of the rice too. I was thinking you could add some chicken and sausage or maybe just one of them. It would also make a good rice for burritos or something of that sort. I'm making myself hungry again. Yummo!!!

Just so you know, I used stuff that I had on hand. You could always add in your own veggies or spices for your special flair. I'm trying the whole "out of the pantry thing right now."
