Last week Mike came to me and said, "You know what sounds good? Chicken and dumplings or chicken noodle soup." I quickly agreed because outside, it was chilly. A full belly filled with warm food sounded like a great idea. So...we chose to make dumplings...yum yum.
So here's how it turned out:
It' was so good. I am in love with homemade dumplings now. Mike did say that they still don't compare to Cracker Barrel's dumplings. But who's would, right?
And of course, I'm going to share how I made them.
Ingredients:
1 quart sie bag of shredded chicken
2/3 cup whole wheat flour
2 Tspn canola oil, divided
2 large carrots, diced
2 celery stalks, diced
1 large onion, chopped small
1 Tbspn poultry seasoning
1/2 tspn salt
1/2 tspn ground pepper
3 cups chicken broth
1 cup water
For the dumplings:
1 cup whole wheat flour
1/2 cup all purpose flour
1 tspn poultry seasoning
1/2 tspn baking soda
1/4 tspn slat
3/4 cup buttermilk
You'll need a dutch oven or a pot of that size. 6 quarts? Toss your chicken in half of the flour and heat 1 Tbspn of oil in the pot. Brown the chicken and transfer to a plate. Reduce your heat and add the rest of the oil. stir in the carrots, celery, onion, 1 Tbspn poultry seasoning, salt and pepper. Cover and cook for 5-7 minutes til the veggies are somewhat tender. Sprinkle the rest of the flour on the veggies. Stir them to make sure they're all coated well. Add the broth, water, and chicken and bring it all to a simmer.
For the dumplings, stir the whole wheat flour, all purpose flour, 1 tspn poultry seasoning, baking soda, and 1/4 tspn salt. stir in buttermilk.
Drop a spoon full size of dough into the pot until your dough is gone. Don't make them too big because they double in size. Let the pot simmer for about 15 minutes. Then you will have some super yummy chicken and dumplings.
If you don't have buttermilk, don't worry. Just take 1 cup of milk and add 1 Tbspn of lemon juice or vinegar. Let it sit for 1-2 minutes and you have a great substitute.
