My Week's Plan


When we decided to start our garden this year I was thrilled. I had so many ideas of what I wanted to plant.


 To sum it all up...everything! But our beds were only so big. We thought and thought and decided to plant certain veggies that we knew we would use a lot of and would be abble to store for later use. We chose the CSA to fill in the missing pieces of our veggie quota.
We picked up our first CSA box this week. I was SOOOO excited to see what was inside I could hardly stand it. You see hear...I LOVE veggies.

Grilled.
Steamed.
Roasted.
Raw.

I think that's about all the ways you can eat them. If I were a single lady, I could very easily live a vegetarian lifestyle because I love them that much. They're so good for you and provide our bodies with so many vitamins and goodies.

Take a look at what we got...

bok choy, asparagus, green leaf lettuce, cabbage, carrots , turnips, strawberries, sweet onions, bag of mixed greens

As soon as I peeked in my box my mind started rolling on what I was going to make this week with my fresh veggies. Here are some things that crossed my mind:
Egg rolls
Coleslaw
Stir Fry
Chicken Salads
Lasagna
Garlicky Greens
Roasted Asparagus
Berries and Yogurt
Slow Cooked Green Beans with turnips
Grilled Onions with squash

Sounds yummy huh? We're working hard to save some money on our grocery bills. This week I'm attempting my own pantry challenge. Working with what is on hand. So... here is our menu for the week based on the box of veggies and what I had in my pantry/freezer/fridge:

Lasagna and salads
Homemade egg rolls with chicken & veggie stir fry
Creamy Chicken pasta with roasted Asparagus
Chicken Melts
Chicken Salad Sandwiches
BBQ beef cubes over rice with garlicky greens
Homemade Ravioli with cheesy white sauce
Pork  with slow cooked green beans with turnips over rice

I know it seems like a lot of work but it's really not. Today I grilled some veggies and chicken on the grill to use for the week's meals.

Having the chicken already cooked cuts back on time in the kitchen. It just takes some thinking and planning. You can do it too. Just remember to take advagntage of your time
