Homemade Cheese-Its...Yum!!!

A couple of weeks ago, I searched for some recipes online. I kept seeing homemade cheese-its and thought...Hmmm...I could make those too!

I looked at different recipes and pulled ideas from several to create my own.

What you'll need:
Kosher salt
1 cup Whole Wheat flour
8 oz Sharp Cheddar shredded (or whatever you prefer)
4 Tbspn Butter
A little bit of water


Preheat your oven to 350.
Take your COLD cubes of butter and cheese and pulse it in your processor. If you don't have a food processor, you can use a pastry cutter to cut in the butter. Similar to when you're making a homemade pie crust. This is what it will look like...you actually want it a bit finer if possible.
Add a spoon or two of water to bring it together and pulse again. Once you're finished, pour the mixture on to a piece of plastic wrap. It's not a total must, but it helps with forming the mix into a ball.


Roll it up and seal it. I put mine in the freezer to help it chill quicker. You don't have to do this and if you think you'll forget it...go the safer route with the fridge.

After a while in the freezer, I'd say about a good 25-30 minutes. Take it out and cut it in half unless you have a super mighty work area. I don't, so in half it goes.

Roll it out to about 1/4 inch thick. I know it seems really thin, but it fluffs up. Cheese-its remember?

The next is tool of choice or on hand. Personally, I think its quicker and easier to use a pizza cutter. Cut the dough into little squares or whatever shape your heart or children desire that week. Sprinkle some kosher salt on top and toss 'em in the over for 25 minutes.


Make sure you watch them. They brown fairly quick. This batch got a little too much sun but the taste was just right.
