My girls are, well, they're in this stage. A stage I'm not too fond of. We've been here before but in a slightly different manner. They've moved past small bite size chunks of food to preferring foods in strip like fashion. Like the shapes of french fries, apple slices, cheese sticks, toast dippers and so on. So in attempt to get them to eat their chicken again, I thought of trying to make them chicken fries.
Here's what I used:
Panko bread crumbs
One boneless chicken breast
1/2 cup milk
A splash of vinegar
Salt and Pepper
How it all went down:
I cut the chicken into small strips. It was partially frozen which made it much easier to slice.
I combined the milk and vinegar to create a mixture like buttermilk. You could just use that if you have it. I didn't. I also added my seasonings to the breadcrumbs...measurements depend on your taste.
I let the chicken soak in the milk/vinegar mixture for a few minutes. It's just something I do.
Next, I rolled the chicken in the bread crumbs and laid them on a cookie sheet lined with foil for easy clean up. I had my oven preheated at 385 and baked them for about 15 minutes or so. Just bake them till their cooked through.
They came out all pretty and golden brown. Nice and flaky.
Want to know a secret though. The girls looked at them and ran in the opposite direction. Yep. Crazy I know! They didn't even try them. I even offered BBQ sauce for dipping which usually brings them running back. Oh well. This isn't the first time they've denied food, that in my mind or even the hubby's, looks, sounds, and IS so good. There's a lot they won't eat, but I'm really trying to focus on what they do eat. As long as it's healthy and nutritional, I'm okay with them eating it several times a week. I just remind myself...
This is just a stage and it too shall pass.
So while my good intentions went unnoticed by my picky eating Littles, my belly truly did enjoy such a yummy and easy treat.
